This is the Pio Cesare family's first single-vineyard Barolo wine. The grapes undergo a 30-day high-temperature fermentation in stainless steel tanks, followed by 30 months of aging in large oak barrels (a small portion of which is aged in French oak for 12 months). The resulting wine boasts smooth tannins and rich, ripe fruit notes of black cherry, plum, and black currant, with a lingering finish. International Wine Ratings. In recent years, the winery has made several significant investments in rebuilding its cellars and upgrading its winemaking facilities. The Roman-era walls remain intact, located 12 meters underground; new gravity-fed fermentation tanks and a new oak barrel aging room were constructed; and new bottling and labeling equipment were installed.
